Anyone for Lemon Meringue?

Happy lovely friends! How are you all? Are you enjoying this lovely weekend? Anything special happening for you? We have had a wonderful family packed weekend, just the way we love it.

Today I wanted to try a lemon meringue recipe that a lovely lady shared on Facebook. It is such a simple and easy recipe.
I love lemon meringue as it takes me back to my childhood and my grandmother making it.

So here is it.... I love the white mountain peaks!



And we always need some spotty plates.

And here it is... It was sooo delicious ladies and gents and so easy to make!

Recipe :
1 Tin of condensed milk
3 eggs
1/2 cup of lemon juice
1/2 cup caster sugar
1 made pie base


  1. Separate egg whiles and yolks in to two bowls.
  2. Whisk egg whites with caster sugar until it stiffens and peaks appear.
  3. Mix your egg yolks and your condensed milk together and add your lemon juice. 
  4. Beat it for 1 minute and it will thicken.
  5. Add your yolk mix into your base and add the meringue spread on top.
  6. Bake it at 160 for 25 minutes.
  7. Cool it on a rack and refrigerate till you serve.
